Menu Plan: Easy Peasy

This week, the summer baseball season starts. And we are trying to get organized and ready for back-to-school time. And we are planning an upcoming vacation. And my full-time gig is getting stressful.

So. Mama needs an easy peasy meal plan to just get us through.

 

Monday: 

  • Granola bars (recipe to come)
  • Guacamole (recipe to come) and chips
  • Grilled Chicken, roasted veg and brown rice (freeze the leftovers for lunches)

Tuesday:

  • Instant Oatmeal (recipe to come)
  • Leftover grilled chicken and roasted veg
  • Taco Tuesday – regular tacos (make extra meat to freeze) with cheese and cherries
  • (O has T-Ball @ 5:45 and X has cub scouts @ 6:30)

Wednesday: 

  • Granola bars (recipe to come)
  • Guacamole (recipe to come) and chips
  • Quesadillas with leftover taco meat, fruit
  • Chocolate fudgesicles (my sweetener of choice is maple syrup)
  • (I have a date with a friend @ 5:30, so Daddy’s in charge of dinner)

Thursday:

  • Granola (recipe to come)
  • Frozen Chicken and roasted veg (recipe to come)
  • Grilled cheese sandwiches and fruit
  • (X has Baseball @ 5:45)

Friday:

  • Toast with butter, peanut butter and jam
  • Frozen Chicken and roasted veg (recipe to come)
  • Homemade pizzas (with pre-made frozen pizza dough)

Saturday:
