Menu Plan: Easy Peasy

This week, the summer baseball season starts. And we are trying to get organized and ready for back-to-school time. And we are planning an upcoming vacation. And my full-time gig is getting stressful.

So. Mama needs an easy peasy meal plan to just get us through.

 

Monday: 

  • Granola bars (recipe to come)
  • Guacamole (recipe to come) and chips
  • Grilled Chicken, roasted veg and brown rice (freeze the leftovers for lunches)

Tuesday:

  • Instant Oatmeal (recipe to come)
  • Leftover grilled chicken and roasted veg
  • Taco Tuesday – regular tacos (make extra meat to freeze) with cheese and cherries
  • (O has T-Ball @ 5:45 and X has cub scouts @ 6:30)

Wednesday: 

  • Granola bars (recipe to come)
  • Guacamole (recipe to come) and chips
  • Quesadillas with leftover taco meat, fruit
  • Chocolate fudgesicles (my sweetener of choice is maple syrup)
  • (I have a date with a friend @ 5:30, so Daddy’s in charge of dinner)

Thursday:

  • Granola (recipe to come)
  • Frozen Chicken and roasted veg (recipe to come)
  • Grilled cheese sandwiches and fruit
  • (X has Baseball @ 5:45)

Friday:

  • Toast with butter, peanut butter and jam
  • Frozen Chicken and roasted veg (recipe to come)
  • Homemade pizzas (with pre-made frozen pizza dough)

Saturday:

Menu Plan: Summer is the Smell of Apple Mint Tea

The taste of mint will always conjure memories of the summer of 2014.

My favorite Indian place has a mint chutney that I can’t get enough of right now. I want to bathe in that sauce.

And the kids have fallen in love with a recipe I’ve adapted from Giada’s apple and mint punch.

We call it apple mint tea. And they love it.

I like that it’s good for them. And we have an abundance of readily available mint in our garden.

So we make it. All the dang time.

Here’s the plan for the week:

Saturday: 

A picnic in the park:

  • Apple mint tea (recipe to come)
  • Watermelon and cantaloupe kebabs (made Friday night and frozen)
  • Mini ham and Swiss sandwiches
  • Mama’s pasta (recipe to come)
  • The Farm Chick’s strawberry picnic pies (made Friday night)

A grownup snack (after picnicking and swimming with the kids):
